Spaghetti with Italian Sausage

INGREDIENTS

1/2 lb hot Italian sausage
1/2 lb sweet Italian sausage
2 green peppers
1 red pepper
2 large onions
2 small cans tomato sauce
1 lb spaghetti

DIRECTIONS

In a large pot, combine the sausage with 1 cup water. Cook over medium heat, covered, 30 minutes. Remove the cover and continue cooking until the liquid evaporates and sausage is well browned, about 15 minutes. Drain fat from the pan, reserving a few spoonfuls. Slice sausage in 1/2″ thick slices, and seed peppers, and slice in strips. Peel onions and slice thinly. Saute vegetables in hot fat til tender. Add tomato sauce and sausage and cook for 15-20 minutes. Cook spaghetti and drain. Spoon sauce on too. Serves 6.

Bay Scallops With Linguine

INGREDIENTS

12 oz linguine
3 Tbsp butter
2 Tbsp olive oil
1 medium onion, finely chopped
1 clove garlic, chopped
1 large tomato, seeded, peeled and chopped
1 lb Bay scallops
1/2 cup dry white wine
1/4 cup minced parsley
salt and pepper to taste

DIRECTIONS

Cook linguine al dente. Heat butter and oil in large skillet. Add onion and garlic and sauté 3 or 4 minutes. Add chopped tomato and scallops and continue to sauté 3 or 4 more minutes. Add wine, parsley, salt and pepper. Cook 2 more minutes and toss with drained linguine. Serves 4.
