Fagioli Con Tonno (White Beans And Tuna)

INGREDIENTS

2 cans cannellini beans
1/4 cup olive oil
1 Tbsp lemon juice
1/2 tsp salt
pepper
1/4 cup chopped scallions
2 Tbsp chopped fresh parsley
1 can tuna, preferably Italian

DIRECTIONS

Drain beans in colander and rinse with cold water. Drain on paper towels. Put in a bowl. Combine oil, lemon juice, salt and pepper and pour over beans. Add scallions and parsley and mix. Mix in tuna and chill. Serves 8.
